Welcome to my blog! This blog is a creative outlet for me to talk about the things I love- nutrition, cooking, fitness, traveling and much more!
I am currently in my first year of graduate school at Texas Woman’s University to pursue my passion for nutrition. It is a combined program where I am working towards my MS in Nutrition and my dietetic internship. If all goes as planned I should be done with my internship in the summer of 2012 and shortly after become an RD. It’s hard to be away from family and friends in Minnesota but I’m enjoying my time in Houston.
Confession: I am a foodie.
The dictionary defines a foodie as “someone who has an ardent or refined interest in food.” To be a foodie is not only to like food, but to be interested in it. Just as a good student will have a thirst for knowledge, a foodie wants to learn about food.
Basically, I love everything that is related to food. Baking is one of my favorite things to do. When I have free time I love to “play” in the kitchen and experiment with recipes. Even when I’m stressed, I find that baking relaxes me.
I like to stay active and especially enjoy running. In the summer of 2008 I ran my first two half marathons. In June 2010 I ran the San Diego Rock n Roll Half Marathon to benefit the Leukemia and Lymphoma Society. I hope to run another half marathon this winter in Houston.
I also love to travel. I’m one of those people that would rather spend their money on traveling than on shopping. I’ve been to Italy, Spain, England, France, Mexico, and all over the U.S.
